- sanitizer measured 100ppm chlorine
- dishwasher reached at least 71C at the final rinse cycle (thermolabel); used only at closing as facility primarily uses single-use items
- rice scoop stored in ice water
- discussed cooling with operator - use ice baths to ensure that the foods are cooled faster; do not solely rely on the walk-in cooler as the warm/hot food can raise the temperature of the foods within the walk-in; recommend purchasing ice wands
