Routine Inspection
- hand wash station stocked with liquid soap and paper towels
- Cooler ambient air temperature below 4 degree Celsius
- freezer ambient air temperature below -18 degree Celsius. Note: Some freezers require defrosting.
- hot holding temperature above 60 degree Celsius
- 50 ppm Cl solution available in the dishwasher rinse cycle
- 100 ppm cl solution for wiping cloths prepared during the inspection. Sanitizing solution should be prepared at the time of opening and changed when needed.
Reminder temperature logs for coolers, freezers and hot holding should be kept daily. Test and record the sanitizer concentration regularly.
