General: - handwashing stations stocked with soap, paper towels and hot and cold running water - sanitizer measured 200ppm quats at dispenser > ensure solution is tested every time it is filled to ensure concentration - dishwasher reached 73C at the final rinse cycle - ice machine appears sanitary - no expired foods upon random audit - operator has noted a minor fruit fly issue; pest control has already attended and set traps.
