Observation (CORRECTED DURING INSPECTION): 0ppm chlorine residual detected at the dish surface after dishwasher's final rinse. This is a repeat violation.
Corrective Action(s): Sanitizer line was primed at time of inspection. 100 ppm chlorine residual detected after final rinse. As previously discussed, check your dishwasher's sanitizer concentration at the start of each day. Note that repeated violations may lead to further enforcement actions being taken.

- New prep cooler has arrived. Top inserts and bottom portion measured at 3C. Prep cooler equipped with an accurate thermometer. Good.
- Reminder that the dishwasher must be checked at the start of each day with your chlorine test strips. (See violation code 302 above - Note that repeated violations may result in enforcement actions being taken).
- No signs of pest activity noted at time of inspection. Operator has sealed potential pest entry points.
