302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): A) Noted meat slicer had dried food debris on underside of the blade.
B) Noted reusable wiping cloths being used in food premises. Only spray bottles available.
Corrective Action(s): A) Ensure meat slicer is thoroughly taken a part and washed/sanitized minimum once every 4 hours and at the end of each night or after each use (which ever is more frequent)
B) Keep all reusable wiping cloths stored in sanitizer solution to prevent the growth of bacteria on the cloth.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Noted hand wash station beside the pizza oven was blocked with a table and dough mixer. Operator relocated these items at time of inspection.
Corrective Action(s): Do not store anything around the hand sink in the pizza preparation area, specifically the space between the hand sink and the pizza oven. The hand wash station is to remain unobstructed at all times.

Observation (CORRECTED DURING INSPECTION): Noted pop cans stored in ice well at the bar area. This ice is intended for public consumption.
Corrective Action(s): Do not store anything in ice intended for public consumption. Discard contaminated ice.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation (CORRECTED DURING INSPECTION): Noted some cardboard lining the prep cooler units across the cookline.
Corrective Action(s): Remove cardboard. Do not use cardboard as it is absorbent and can harbor bacteria. All surfaces of food equipment are to be non absorbent and washable.

Comments

- All handwash stations had soap, paper towel, hot and cold running water. See violation code 401 re: accessibility of hand sink in the pizza preparation space
- All coolers 4C or less (walk in, prep coolers x2 in kitchen, under counter coolers, inserts of pizza prep area...etc)
- Stand up freezer -18C
- All foods in cold storage were covered and stored properly (ie. separation of raw meats and ready to eat foods)
- No hot holding at time of inspection. Chef says all foods are made per order.
- Ice wand available on site.
- Reviewed proper cooling procedures at time of inspection. Ensure foods are cooled from 60C to 20C within 2 hours (use ice bath, ice wand, shallow prechilled containers..etc to facilitate cooling at room temperature as quickly as possible) then cooled from 20C to 4C within 4 hours (done in the cooler unit at 4C or less).
- Probe thermometer available to take internal temperature of foods. Ensure probe is sanitized between uses.
- Colour coded cutting boards used for food preparation.
- Ice machine appeared clean with the scoop for the ice stored outside of the ice in a separate container. See violation code 209 re: storing of pop cans in ice well at the bar
- Good general sanitation. No obvious signs of pest activity noted at time of inspection. Back door was closed.
- Hood ventilation system clean.
- Lights in food preparation areas had covers.
- Dry storage area well maintained. All foods covered and stored off the ground.
- Quat sanitizer in spray bottles 200ppm. Quat is manually mixed/diluted as per instructions on bottle. Test strips available to verify concentration of sanitizer solution. See violation code 302B re: storing reusable wiping cloths in sanitizer solution
- High temperature dishwasher achieved 71C (with thermolabel).
