Observation: Same standup fridge is reading 38F (gauge turns on when light is on) but when using both infrared thermometer and probe thermometer to determine, temperature was around 8.9C. Operator informed that he cannot locate the dial to turn the temperature down. Perishable foods are in walk-in cooler.
Corrective Action(s): Please install a separate thermometer and have technician service this unit so that it can store food at 4C/40F or lower.

Paper towel refilled in men's washroom.
No cardboard lining in walk-in cooler, noticed the brown stain on walk-in cooler is rust and unable to be removed.
Cleaning is done on a weekly basis as per owner.
All flour bags are stored off the floor.
Bleach sanitizer is at 100ppm in labelled spray bottles.
Pest control reports from last two months were received by e-mail.
No signs of indian meal moths at time of inspection; suggested getting totes on wheels where whole bags of dry ingredients can be placed inside directly.
