209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): 1) Staff observed to accept food item from customer and replace bun. Food item had previously been served to customer. Although no visible signs of food item having been eaten this is not best practice. Discussed with Manager. Once a food item has been served to customer it is to be discarded and completely replaced. The food items that have been served to customers are never to enter back into food preparation areas. CORRECTED DURING INSPECTION - Counters sanitized. Discussed with Managers
2) Staff lunches observed to be stored in three separate coolers.
3) Raw chicken observed to be stored adjacent to raw cut mushrooms and spinach - CORRECTED DURING INSPECTION. Food items relocated by staff. Mushrooms and spinach moved.
4) Ice scoop bin needed for car hop fountain drink area. Ice scoop bin needs cleaning at main ice machine.

Corrective Action(s): 1) Ensure policy regarding food sent back to kitchen is thoroughly reviewed with all staff
2) Find one location for all staff lunches to be stored. Preferably in large tub/bin away from all other customer food items
3) Ensure staff place items in proper locations in cooler unit. Mushrooms and spinach away from raw meat items.

Some organic debris found on wall behind dishwasher unit.
Drain cupboard in serving station has exposed plumbing with accumulation of debris.

- Facility in EXCELLENT sanitary condition - noticeable improvement in overall sanitary condition of facility - EXCELLENT WORK!!

- Coolers achieving temperatures of less than or equal to 4 degrees Celsius
- Freezers achieving temperatures of less than or equal to -18 degrees Celsius
- Hot Holding achieving temperatures of greater than or equal to 60 degrees Celsius
- Dishwasher achieving final sanitizing rinse of greater than or equal to 50ppm (56 degrees Celsius) at the dish; Dishwasher sanitizing gloves between dirty and clean loads
- Glasswasher achieving final sanitizing rinse of greater than or equal to 12.5ppm Iodine at the glass
- Sanitizer solution in use throughout food preparation areas and at concentrations of greater than or equal to 200ppm QUAT
- Sanitizer solution from dispensing unit at concentrations of greater than or equal to 200ppm QUAT
- Ice machine in good sanitary condition
- Proper thawing techniques observed in cooler unit
- First In First out and date stamping methods observed in use
