Observation (CORRECTED DURING INSPECTION): Pizza, after being baked in the oven, was left out for a period of time before being placed into the hot-holding cabinet (Internal temperature of pizza: 48C, hot-holding cabinet temperature: 65C)
Corrective Action(s): Pizza was placed back into the oven, then back into the hot-holder. It was at a temperature of 65C near the end of the inspection. Please ensure that you turn on the hot-holding cabinet FIRST prior to baking the pizza, if you intend to hot-hold.

Observation: Toppings in prep cooler, including pineapples and olives, were uncovered at time of inspection.
Corrective Action(s): Toppings were covered during the inspection. Ensure that you cover all food products to protect them from contamination.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1. Hand wash station is slow to drain.
2. Paper towel dispenser is not fully functional and a roll of paper towels is used for the time being.
Corrective Action(s): 1. Unclog the hand wash station sink.
2. Paper towel dispenser to be replaced with a new one, according to the operator.

Comments

Routine inspection conducted. The following observations were made:

1. Temperatures
- Walk-in cooler at 3C
- Prep cooler at 2C (bottom) and 4C (top)
- Beverage cooler at 4C
- Chest freezer at -15C
- Temperature logs present, but were not maintained for the past few days. Ensure that you maintain your temperature logs every single day to confirm that your equipment is working properly

2. Hygiene and Sanitizing
- Hand wash station adequately stocked with hot/cold running water, liquid soap, and single-use paper towels in washroom and in kitchen area
- Bleach sanitizer spray bottle available at ~100 ppm chlorine residual
- 3-compartment sink available for ware-washing. Third compartment had approximately 50 ppm chlorine at time of inspection
- Pizza trays are cleaned and sanitized nightly, and were in excellent sanitary condition
- Dough mixer and presser in satisfactory sanitary condition

3. Storage
- Food products generally stored at least 6" off the floor
- No raw products present
- Chemicals are stored inside the restroom *Reminder that your mop sink should stay with chemical storage when not in use*

4. Pest Control
- Mechanical trap inspected did not contain any pests at time of inspection
- No other visible signs of recent pest activity
- Orkin arrives each month. Pest report currently with property manager - please show EHO during the follow-up inspection in two weeks' time

5. Administrative
- Operator has FoodSafe 1 (Valid until 2021)
- Permit posted and up-to-date

6. Structural
- Lights were recently replaced in facility with LED light panels throughout the facility - excellent. Thank you for your co-operation

7. The following also require your attention:
- Replace all paper on shelving with shelf liner
- As stated in code 308, paper towel dispenser is to be replaced. Do not use rags to wipe hands
