Observation (CORRECTED DURING INSPECTION): Internal temperature of salmon in the sushi bar registered 9-10 degrees C. All items must be discarded.
Corrective Action(s): All food items stored in the sushi bar were discarded at the time of inspection. Repair or service the cooler so that it
maintains sushi items at 4 C or below at all times. Do not use the cooler untill it maintains 4 C or below.

*Clean floor underneath and behind the deep freezer and all storage shelves. Recommended placing rodent traps in the dry storage areas.
All food items must be stored on shelves at least 6 inches off the floor.

Hot holding of rice and miso soup is >60 degrees C.
Deep freezers below -18 C.
Upright freezers at or below 18 degrees C.
Dishwasher final rinse: 74.5 degrees C at the plate surface.
Liquid soap and paper towels available at the hand sinks.
Sanitizer bucket: 200 ppm chlorine bleach solution. Good. Recommended labelling the bucket.

Tiled floor underneath the sushi preparation coolers have been grouted. Good.
