Observation: No quats test strips on-site. Quats test strips ensure that the concentration of quats meets the 200 ppm requirement for sanitizing food contact surfaces. Sanitizer concentration at the dispenser must be recorded every day with the test strips. Records should be available for review upon the inspector's request. Glasswasher supplying 100 ppm chlorine sanitizer at the glass surface upon final rinse cycle. Chlorine test strips available. NOTE: Staff must record the chlorine concentration at the glasswasher with the test strips daily to ensure that the unit is maintaining calibration - records must be available for review upon the inspector's request
All handsinks equipped with hot and cold running water, liquid soap and paper towel
High-temperature dishwasher reached 77.7C at the plate level upon final rinse cycle (min/max probe thermometer)
Quats sanitizer available in spray bottles
Knife racks in sanitary condition
Meat slicer in sanitary condition
