Observation: Rat droppings noticed behind the deep freezer and behind the flour bins in the alleyway.
Corrective Action(s): Hire a licensed pest control company to set up traps for rodent control. Clean and sanitize the areas to remove rodent droppings.
Ensure that all food items are stored in bins with tight fitting lids. Do not leave any open food items in the restaurant unless it is secured in a bin or stored in a fridge. ( Immediately)

Observation: Build up of food debris and dirt noticed underneath the dishwasher, cookline and in dry storage areas.
Corrective Action(s): Through cleaning required throughout the premises especially underneath and behind all shelves, equipment and coolers etc.( By August 15, 2018)

Observation: Shelving above the food preparation counter found to be deteriorated and chipped off.
Corrective Action(s): Replace all shelving above the food preparation counter with smooth, non-absorbent and easy to clean shelves ( By August 15, 2018)

Observation: Sliding door cooler used for storing raw meats/poultry registered 7-8 degrees C.
Front preparation cooler registered 10-12.5 degrees C. Too high ( Lunch rush??)
Pastry display cooler at 10 C.
Corrective Action(s): Relocate all potentially hazardous foods to an alternate cooler operating at 4 C or below
Repair or service the above coolers to ensure that they are capable of maintaining food and beverages at 4 C or below
at all times. ( Immediately)

Comments

* The back door in dry storage room must be kept closed at all times unless a screen door is provided.
* All take out dishes and cups must be stored on shelves above the floor.
* Do not store any raw chicken or meats etc in the walk-in cooler to prevent cross contamination of
salads and other ready to eat food items.
* Repair or replace broken tiles in the kitchen.
* Ice maker requires thorough cleaning after removing all ice from the bin. Use manufacturer recommended
cleaner to clean the ice maker.


Walk-in cooler below 4 C.
Walk-in freezer below -18 C.
Deep freezer < -18 C.
Dishwasher final rinse: 71 C at the plate surface.
Liquid soap and paper towels available at the hand sinks.

Failure to address the above issues in a timely manner will result in further enforcement action.
