Observation (CORRECTED DURING INSPECTION): Front pastry 2 door cooler observed to have products at ~9°C. Door was opened.
**Corrected during inspection** Door closed by inspector and checked to ensure temperature was lowering towards 4°C.
Reeducate staff on importance of ensuring cooler doors are closed.

Observation (CORRECTED DURING INSPECTION): *REPEAT* (Since March 2023) Chlorine spray bottle measured >200ppm; test strip was bleached.
**Corrected during inspection** Reviewed proper sanitation mix. Operator was confused and thought test strip needed to be 'white'.

1. Please post proper mixing ratio up near sink so all staff can follow mixing instructions:
1/2 tsp unscented household bleach (5-6%) : 1L water

2.Please use household unscented bleach (5-6%); facility observed to be using commercial grade bleach (12%) typically used by dishwashers.
If using commercial grade bleach, remember to wear appropriate personal protective equipment (e.g. gloves, goggles) and use 1/4 tsp unscented commercial bleach (12%) : 1L water

Handwash station equipped with hot/cold running water, liquid soap and paper towels
Bleach sanitizer measured 200ppm by test strip by end of inspection
2 compartment sink used for dishwashing
Washroom maintained in sanitary condition; not available for use by public
Rice scoop and container replaced and cleaned every hour. Recommended to have timer to remind staff to replace and clean

Storage:
All food items were stored at least 6" off the floor.
All products were either in original packaging or covered inside coolers.
Storage area was well-organized.
Chemicals and cleaners were stored separate from food preparation areas.

General:
No pest activity observed at time of inspection
