Fry cooler and Salad cooler still being repaired, new fry station cooler to be ordered today.
Condiments being kept in ice until such time as the new cooler arrives.
Make sure that all potentially hazardous foods that are kept in ice that the ice completely surrounds the food container, do not just sit the container on ice as this will not maintain temperature. Make sure only small quantities of food are kept in ice and the containers changed often to minimize any pathogen growth.
Do not keep any potentially hazardous food in the box of these units as they can not be maintained at less than 4C.
