Observation (CORRECTED DURING INSPECTION): Found multiple cut fruit and vegetables sitting at room temperature on counter or in portable coolers with out ice.
Corrective Action(s): Once fruit and vegetables are cut they must be kept below 4 C, either keep them in the freezer or coolers unless using.
Return food items to cooler and freezer if unable to finish task before going on break.
If unable to keep items in coolers or freezers, may need to reduce menu to accommodate space.

Observation (CORRECTED DURING INSPECTION): Found Spray bottle to have > 200 ppm chlorine.
Corrective Action(s): Ensure chlorine sanitizer is 100 - 200 ppm chlorine (1 tsp per litre water).

Observation (CORRECTED DURING INSPECTION): No hot water is available on-site, has been broken for a couple of days.
Corrective Action(s): Premises is required to close until hot water tank can be repaired or replaced as hot water is a requirement for food service establishments.

Observation: Was advised mop water is being dumped in 2 compartment sink in food handling area, mop sink is completely blocked by boxes
Corrective Action(s): Dirty mop water from the floor is to be disposed of in the mop sink in the storage room, clear access to the mop sink.

Observation: Fruit flies noted around 2 compartment sink and safe.
Corrective Action(s): Increase cleaning of hard to reach areas, clean up spills as soon as they happen, clean drains (floor and sinks). Contact pest control to assist if need be.
