Observation (CORRECTED DURING INSPECTION): Ready rack system is not being used properly. Employee is not using timing system, but stated that pizzas were not supposed to sit a room temperature for more than 1 hour, then stated they had been there for 1 1/2 hours.
Corrective Action(s): Implement proper timing rotation for ready rack system. Train your employees to know proper store procedures. For food safety, you may not keep foods at room temperature for more than 2 hours. Ensure that pizzas are either discarded at the end of 2 hours or are cooked. Correct immediately.

**Sanitizer for dishwashing is onsite, but employee did not know how much to use in the 3 compartment sink for sanitizing dishes. Ensure that you train your employees properly. Recommend putting up posters / pictures on the wall above dishwashing area for staff to reference when filling sanitizer compartment in sink.
