Routine Inspection Coolers at 4 C or below. Hand washing sink equipped with hot/cold running water, liquid soap and single-use towels. High temperature dishwasher registered at least 71 C on plate surface during final rinse. Surface sanitizer available and registered 200 ppm bleach. . Discussed room temperature holding of pearls - used within 30 minutes. Ice machine in a clean condition - do not store scoop in ice.
