Corrective Action(s): Paint (white) or seal all exposed wood shelves such that they are smooth impervious and easily cleanable. This should be done before next scheduled inspection.

Comments

Men's washroom exhaust fan either too weak or not working well enough to draw in paper towel. Recommend replacement with stronger fan to match draw to female washroom.
Temperature controls OK. Cooling units less than 4 C; Freezers less than 18 C.
- Sushi bar cooler still supplemented with ice packs to improve temperatures. OK.
Dishwasher at 100 ppm and sanitizing spray bottle at 200 ppm. OK
General cleanliness pretty good.
All absorbent barriers placed below food contact surfaces (i.e. newspaper or cardboard) must be changed daily or removed from use.
