Observation (CORRECTED DURING INSPECTION): Discussed dishwashing procedures with operator and he wasn't aware of the proper method for manual warewashing.
Corrective Action(s): Dishes must be washed with soap in the 1st compartment; rinsed with water in the 2nd compartment of the sink; sanitized in the 3rd compartment; then air-dried.

Corrective Action(s): Clean these areas using bleach/water solution to remove all droppings. Continue monitoring for rodents as discussed.
