Observation: Observed abundant mould in the ice machine, could cause allergic reaction in people sensitive to mould.
Corrective Action(s): Please empty ice machine then clean and sanitize today.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation: Hand wash sink did not have soap and paper towel available in bar area, staff discouraged from washing hands in bar area, instead directed to go to kitchen to wash hands.
Corrective Action(s): Please stock the bar sink with soap and paper towel immediately. Also please encourage staff to wash their hands in the bar area if needed. This will encourage frequent washing, as placing the hand sink far away may cause staff to delay in order to continue working.

Observation: Paint on ceiling tiles beginning to flake and fall off, concern exists for physical contamination of food. Also, panel near walk in cooler has been removed, providing potential entrance for pests.
Corrective Action(s): Please repair or replace peeling tiles, and replace missing ceiling tile.

Comments

General observations:
-Ensure dough flattener is cleaned before each use to prevent physical contamination of food
-Paint on underside of mixer is beginning to chip. Please consider re-painting if the condition deteriorates further, again to prevent physical contamination of dough

Operational obervations:
-Coolers at 4C or less, freezers -18C or less
-Hot holding at 60C or greater
-Sanitizer in appropriate concentraion (100ppm bleach)
-Lo-temp dishwasher functioning properly (reaching 45C and 100ppm chlorine sanitizer)
-General sanitation of kitchen and dining area very good
-No pest activity noted at time of inspection
