* Dishwasher final rinse was 50 ppm chlorine residual at plate surface
* Monitoring records were available and up to date; update cleaning monitoring records to reflect deeper cleaning tasks
* Food was covered in storage
* Freezer units were -18'C or colder; repair gasket on small freezer as ice building up inside door
* Staff were dressed appropriately with hair protection and uniforms while handling food
* Sanitizer concentration was 200 ppm quaternary ammonium concentration in bucket to store wiping rags
* Cold-holding units were 4'C/40'F or colder
* Hot-holding units were working at 60'C/140'F or hotter; Note: some rice had to be reheated as it was below 60'C/140'F
