All fridges are 4 degrees Celsius or colder.
All freezers are -18 degrees Celsius or colder.
Soups and foods in warmers are all 60 degrees Celsius or hotter.
Dishwasher contained a 100 PPM chlorine residual at the plate surface.
Buckets of sanitizer water in kitchen measured 200 PPM quat residual. Servery buckets only measured a maximum of 150 PPM. Staff changed these solutions during inspection. Ensure that they are maintained at 200 PPM quat residual at all times.
