Food not cooled in an acceptable manner [s. 12(a)] (Clear soup cooling at room temp for 1.5 hours noted at 52 C. Large pot of Salmon cooling at room temp in front of fan noted at 31 C. Oven cooked chicken in covered insert in prep cooler noted at 32 C internal on the top and 45 C in the middle of insert (probed).)
Comments

-Rapid cooling: Ice bath method will be used to cool hot foods. Ice has been purchased and put in walk in freezer until needed. 2 comp prep sink will have cold water to surround inserts/pots of hot food and ice will be added to bath. Cooling must occur within 6 hours to <= 4 C.
-2 comp prep sink cold water knob has been replaced and is operational.
-Operator will avoid advanced prep of hot foods to minimize needs to rapidly cool. Hot food will be prepared just before dinner rush to minimize the need to cool and then reheat foods.
-Front standing glass cooler still noted above 4 C. PHFs are not stored in unit longer then 2 hours before they are served or put back into walk in cooler <4 C. Technician has been called and will arrange service date.
