Dirt observed on the door of the ice machine. Clean and sanitize the door on a regular schedule.

Soups hot held at 65-70 degree C.
Under counter coolers at or below 4 degree C.
Preparation cooler inserts and bottom section at or below 4 degree C.
Up-right cooler at 1 degree C.
Up-right freezer at -18 degree C.
High temperature dishwasher registered 79 degree C at plate level during the final rinse cycle.
