Observation (CORRECTED DURING INSPECTION): At the time of inspection bleach sanitizer concentration 0ppm for bleach sanitizer spray bottle for use in the front area.
Corrective Action(s): Ensure during operation a 100ppm bleach sanitizer solution is available for use in the front and back area. General sanitizer formula: 1 oz of regular unscented bleach to 1 gallon of water.

Observation:
- Containers of food observed stored on top of wooden board placed on top of garbage can.
- Containers of food stored on the floor inside the walk in cooler.
- Scoops and other dispensing utensils stored inside dry products.
Corrective Action(s):
- Do not store food products on top of the garbage can.
- Do not store food products on the floor.
- Do not store scoops and other utensils directly in dry products.

Ensure all food is protected from contamination at all times. Store food off the floor, use covers, store scoops and other dispensing utensils outside of dry products and do not store food products on top of garbage bins. Correct immediately.

Observation: The following areas require a thorough cleaning:
- Underneath and behind the 2 compartment sink.
- Underneath and behind the storage area.
- Walls and floor inside the walk in cooler.

- Thoroughly clean the exhaust canopy. Grease accumualtions observed. Some cleaning required under the deep fryers.
Corrective Action(s): Thoroughly clean the above noted areas. Clean underneath and behind equipment on a regular basis. Correct by March 14, 2020.

Observation: Shelving unit above the 2 compartment sink laminate material covering particle board is dmaged and peeling.
Corrective Action(s): Replace the damaged shelving unit. Ensure all work surfaces are smooth, non absorbant and easy to clean. Correct by March 24, 2020.
