Observation (CORRECTED DURING INSPECTION): Raw eggs (>10) placed at room temperature for less than 1 hour. Staff had moved the eggs into walk-in cooler at this time.
Corrective Action(s): Ensure to have raw eggs stored in cooler at all times. Any cold potentially hazardous food stored above 4'C for more than 2 hours must be discarded.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Sanitizer bucket had 0ppm chlorine measured. 200ppm chlorine was prepared and staff was advised to have all food contact surfaces sanitized at this time.
Corrective Action(s): Ensure to have the sanitizer solution prepared and food prep surfaces sanitized BEFORE initiating any food prep in the morning.

Observation (CORRECTED DURING INSPECTION): A cardboard box was placed inside the handwashing sink at the beginning of the inspection. Staff had removed the box. Handwashing sink was adequately supplied with liquid soap, paper towels and hot/cold running water.
Corrective Action(s): Ensure to have the handwashing sink accessible for use at all times, as this is the ONLY handwashing station available in the kitchen.

Observation: Rice scoop stored directly above rice cooker.
Corrective Action(s): Ensure to have the scoop stored in a sanitized container, not directly above the rice cooker or counter-top. Obtain proper scoops for dry storage bins.

Observation: Mouse droppings (<5) observed on floor behind a chest freezer and underneath 2 comp sink. Traps in place. Professional pest control company contracted for a monthly visit.

- Foods obtained from approved sources. Receipts checked at this time.
- Washroom handsink satisfactory.
