-The cooler underneath the microwave had an ambient temperature of 6.7 C. Ensure that this is adjusted to 1-4 C.
Walk-in cooler and prep. cooler were < 4 C.
All freezers were < -18 C.
Hot holding units were > 60 C.
No evidence of pests.
Quats sanitizer solution was at 200 ppm.
General sanitation was satisfactory.
