Comments

All coolers were < 4 C, except for the prep cooler, which was at 7 C. Monitor to ensure that it goes down to 4 C. All freezers were < -18 C. Temperature and dishwasher records were up to date. No evidence of pests. Quats sanitizer solution was at 200 ppm Dishwasher final rinse cycle had 100 ppm chlorine. General sanitation was satisfactory.
