209 - Food not protected from contamination [s. 12(a)]
Observation: Plastic scooping spoons with broken handles are used in the freezer unit to scoop frozen cheese cake blocks. The scoops directly in the food with broken plastic handles may contaminate the food.
Corrective Action(s): Ensure food in storage is free of contamination. Provide the following utensils for handling food:
1. Dedicated food grade scoops with clean handles.
2. Store the scoops in a clean sanitary manner, for example in a clean bin beside the food containers.
Correction required in two days.

Observation: There is a minor black grease leak on the piping located under the fumehood. It is located right beneath the ToptoBottom Fumehood service sticker. Cleaning of this area is required to prevent slipping accidents or food contamination.
Corrective Action(s): Ensure this area is cleaned as needed to prevent slipping and food contamination. If repair is required, enlist a licenced techician for repair. Correction required this week.

Premise overall is sanitary.
No signs of pests at the time of inspection.
Hot and cold water available.
Dedicated Hand sinks with liquid soap and paper towels available.
Staff demonstrate good personal hygiene and sanitary hand washing.
Washrooms are sanitary with fully stocked hand sinks.
Ice machine is sanitary with dedicated hand scoop.
Temperature holding is adequate in use with accurate thermometers and logs.
Take out containers and utensils are sanitary.
3-compartment sink in use. Quat sanitizer in use at 400 ppm.
Sanitizer buckets with quat solution in use and refilled frequently at least once every 2 hours.
Chemical test strips and logs available.
Valid Permit posted in conspicuous location.

Holding units:
Coolers at 4C and below. Walk in freezer and stand up/counter freezers between at -18C and below.
Hot holding at 72C and above for cooked meat and sauces.

Note: A garbage fire occurred in the morning of April 19, 2024 located in back parking lot. Fire department and RCMP have addressed issue. The fire incident did not impact the food premise. No smoke or fire impacted materials observed in food facility observed at the time of inspection.
