Observation (CORRECTED DURING INSPECTION): Two bus pans of pasta sauce observed stored in cooler, internal temperature of products 54.2 C and 58.1 C.
Corrective Action(s): Directed cook to cool on ice bath. Again, you must cool from 60 C to 20 C in 2 hours, then 20 C to 4 C in 4 hours.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation: Hot water of handsink by ice machine not working. Fixture is almost completely detached from wall.
Corrective Action(s): Repair handsink so that it is fully plumbed, secured and able to supply hot and cold running water at all times (2 days).
Handwashing to be conducted at the other available handsink for the time being.

Observation: Obvious improvement with fruit fly infestation, however, premises has not been receiving the directed increased pest control frequency as per last inspection report (Aug 7, 18).
Corrective Action(s): Contact your technician for immediate service to target the flies (today). Retain invoice for EHO to verify next follow-up.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Pizza prep cooler and cooler beneath pizza oven are still leaking condensate.
Corrective Action(s): Premises was instructed to complete reparations within 2 weeks time of last inspection (conducted August 7th). This is still outstanding, complete by Sept 17, 18.
