Observation: Small batch of fried tofu cooked and placed directly into top insert. Food temperature at 37 degrees Celsius. Staff was supposed to place into walk-in cooler prior to placing into insert cooler.

- Hot Holding achieving temperatures of greater than or equal to 60 degrees Celsius
- Two functional sink plugs available for use

- Ice machine in good sanitary condition
