Observation: 1. 0 ppm iodine residual detected in both glass warewashers in the bar area.
2. Used tea bag noted in a tea pot in the bar area.
Corrective Action(s): 1. DO NOT USE both glass warewashers until 12.5 - 25.0 ppm iodine residual can be detected at the machines. All glasswares that need to be washed and sanitized today will need to be run through the kitchen dish machine. Bar staff contacted maintenance for fixing the glass warewashers during the inspection.

2. **Issue corrected during the inspection** Bar staff removed the dirty tea pot and brought it to the dish washer during the inspection.

Observation: 10+ ants noted on the floor below the dirty side of the kitchen dish machine, below the faucet sprayer sink.
Corrective Action(s): Contact your pest control company to help with the pest issue. Fix the leaking dish machine pipe to avoid pooling water which acts as a breeding ground for the ants.

Observation: 1. Dust noted on the ceiling and by the fan unit in the alcohol walk-in cooler.
2. Dried on spilled wine noted on the nitrogen tank by the in-use box syrups.
Corrective Action(s): Clean and sanitize the aforementioned areas and maintain in a sanitary condition.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1. Seeping water noted from one of the pipes coming out of the kitchen dish machine when in operation. As per Kitchen Manager, they are aware of issue and is looking to fix issue in the next couple months.
2. 0 PPM iodine detected in the glass warewashers (2 units in total) during the inspection.
Corrective Action(s): 1. Fix the pipe so that there are no longer pooling water when the kitchen dish machine is in use. Pooling water allows for the harbourage of pests. This is evidenced as 10+ ants were noted around that area during the inspection, therefore this becomes a pest issue and needs to be addressed as soon as possible.

2. Bar staff contacted maintenance for fixing the glass warewashers. DO NOT USE both glass warewashers until 12.5 - 25.0 ppm iodine residual can be detected at the machines.
Have the chemical suppliers supply you with a new iodine test kit (previous one noted damaged) and have them teach you how to take the reading to ensure the machines are able to attain 12.5 ppm - 25.0 ppm iodine residual before using.

Routine inspection conducted today:
Handwash stations, including the staff restroom, was accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were at ≤ 4C.
All freezer units were at ≤ -18C.
Storage hierarchy excellent in the walk-in cooler. All food stored protected/ covered in all refrigerator and freezer units.
Please note to also pay attention to the storage hierarchy in the walk-in freezer. Noted a bag of crab meat stored above potato fries. Although risk is low as the food is frozen but in the event that the walk-in freezer malfunction, food may thaw leading to a potential risk of cross-contamination. Ensure to practice good storage hierarchy in the walk-in freezer as well.
All hot hold units were > 60C.
200 ppm QUATS detected in the sanitizer spray bottles throughout the premises.
Fume hood (due for professional cleaning on July 30, 2022), interior of the ice machine, knives on magnetic knife holder were noted in excellent sanitary condition.
High temperature dish machine was able to attain 72.9C at the plate level during the rinse cycle.
Overall organization noted satisfactory.
Kitchen Manager's FOODSAFE level 1 certificate verified - expires July 28, 2023.
