Observation (CORRECTED DURING INSPECTION): Pizza in display warmer mesasured ~50°C at start of inspection. Staff stated this was due to the unit being recently turned on.
**Corrected during inspection** Product is now time controlled product; to be discarded after 2 hours.

Hot holding products must maintian temperatures of 60°C or above.
Purchase an oven thermometer to ensure unit reaches appropriate temperatures before placing product inside.
Do not place food inside warmer until unit can maintain temperatures of 60°C or above.

Observation: 1. *REPEAT* (Since March 2023) Floor drain observed to have heavy bulid up of food and grease debris. Staff on site stated this was cleaned every other day.
2. Grease build up observed on floor under and between cooking line appliances.
Corrective Action(s): 1. Based on observation and frequency of cleaning, floor drain will need to be cleaned out daily.
