Observation (CORRECTED DURING INSPECTION): 1) Tray of pastries displayed on front service counter without lid on or sneezeguard/barrier to protect food from contamination
2) Bag of flour stored directly on the floor. This is a repeat issue.
Corrective Action(s): To ensure food is protected from contamination:
1) Cover tray of pastries or move from front service counter. Covered at time of inspection.
2) Store all food products on shelving at least 10cm off of the floor. Moved to shelving unit at time of the inspection.
Note: Pest proof containers are recommended for dry goods.

304 - Premises not free of pests [s. 26(a)]
Observation: Minimal amount of mouse excrement was present in the following areas:
- lowest shelf under counter top oven
- lowest shelf in corner under front service counter
- floor under dry storage shelving
Corrective Action(s): - Wet mouse excrement with disinfectant (bleach solution) and clean affected areas to remove excrement.
Note: Cleaning and disinfection of shelves completed at time of inspection.
- Monitor for any further rodent activity to establish if rodent activity is current or from past issues. If any additional rodent droppings are noted, clean up promptly and retain the services of a Pest Control Technician.
- Traps (glue boards, snaps traps, or tincat style traps) should be placed for monitoring/control.

Observation (CORRECTED DURING INSPECTION): - Spray bottle containing quats food contact surface sanitizer was labelled as hand sanitizer.
Note: staff were aware quats sanitizer was in the spray bottle despite incorrent labelling
Corrective Action(s): - To ensure that chemical are used safely and for the appropriate purpose, ensure chemicals are labelled properly. Spray bottle was labelled correctly at time of the inspection.

Observation: - Operator not present and neither staff on duty have completed Foodsafe level 1 or equivalent. In the Operator's absence, there must be at least one staff on duty who has completed Foodsafe level 1 or equivalent

Comments

- General sanitation of premises and equipment was satisfactory (aside from presence of mouse excrement noted in violation above)
- Liquid soap and paper towel available at handsinks. Load paper towel into dispensers. If current wall mount dispensers are no longer able to be used, replace with dispensers suitable for paper towel type.
- Coolers were operating at 4C or colder and equipped with thermometers
- Freezers were maintaining products frozen
- Ice scoops stored in a sanitary manner outside of ice bin
- Reviewed cleaning and sanitizing requirements for in use items (ie. stirring spoons, pitchers) - to be cleaned and sanitized at least every 4 hours.
- High temperature dishwasher: 73.6C at dish surface
- Quats sanitizer (200ppm) present from dispenser and in spray bottle for sanitizing counters and food contact surfaces *See violation above re: labelling of chemicals
