302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): No sanitizer available for use in kitchen. 200ppm chlorine solution was prepared in a bucket at this time. Staff were advised to have all prep surfaces sanitized at this time.
Corrective Action(s): Ensure to prepare the sanitizer solution and sanitize all prep surfaces before initiating any food prep in the morning. Use the solution to sanitize all prep surfaces after each possible contamination and every 2 hours during operation as well.

209 - Food not protected from contamination [s. 12(a)]
Observation: 1) Fish fillets in a mesh container placed between the dishwasher and dishwashing sink for draining. Moved to the prep sink at this time.
2) Raw meats placed right next to cooked foods and various foods left uncovered in walk-in cooler.
3) Foods in stainless bowls stacked on top of another without protection in between.
4) Bag of chick peas left open on the dry storage shelf, where rodent droppings were observed. Some chick peas were observed by the droppings - all discarded at this time.
Corrective Action(s): DO NOT place any food by the dishwashing area to protect food from contamination at all times.
DO NOT place raw meats/seafood by the cooked/ready to eat foods.
Ensure all foods are properly covered with food grade materials. Do not stack food on top of another without providing protection in between. Ensure ALL dry goods are stored in pest proof containers once opened.

Observation: Rodent droppings were observed from the back storage area - bottom two shelves and by the back entrance. Pictures were taken.
Corrective Action(s): Ensure to monitor for droppings and remove when found EVERY morning. Treat the affected area using bleach.

Observation: Back storage area requires decluttering and better organization.
Corrective Action(s): Remove all items from the floor under the shelving units and declutter the area to reduce potential harbouring areas and better monitor for pest activity.

Comments

Routine inspection conducted:

-Handwash stations adequately supplied with liquid soap, paper towels and hot/cold running water.
-Coolers operating at/below required temperature of 4'C; Freezers operating below required temperature of -18'C.
-Buffet tables operating >60'C. Buffet last for the whole day. Foods kept in small batches. Good.
-Thermometers available for temperature monitoring. Operator checks temperature on a daily basis.
-Low temperature dishwasher achieved >50ppm chlorine at the plate level after final rinse.
-Operator Foodsafe level 1 certified (good until Jun10, 2024)
-General food storage practice satisfactory, except mentioned above. Most dry goods stored in pest proof containers.
-General sanitation satisfactory, but improvement required to better monitor for pest activity. Refer to above.

The following must be done EVERYDAY:
Ensure to remove all food debris from floor/surfaces of equipment to prevent providing food for pest
Ensure to monitor for droppings and remove. Treat the area using bleach to prevent them from returning to the area.
Ensure to check the traps. Place more traps with peanut butter to capture.

Contact the professional pest control company for inspection.

Wooden shelving unit at the back storage area to be repainted. Areas will be decluttered, reorganized and cleaned. OK.
