Comments

-Walk-in cooler was at 4C.
-Walk-in freezer was at -18C.
-Deli display cooler was at 4C.
-Under counter cooler was at 4C.
-Customer area bank coolers were at 4C.
-Hot holding of soup and chicken was greater than 60C. Foods are cooked to greater than 74C prior to hot holding. Chicken is hot held for 4 hours and then pulled.
-Pastries were baked to greater than 74C.
-Temperatures are checked and recorded daily.
-High temperature dishwasher had a final rinse temperature of 74C on the dish surface (minimum of 71C required for proper sanitizing).
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats sanitizer dispenser was at 200ppm. Sanitizer spray bottles were labelled and tested at 200ppm.
-Staff stated deli slicer is sanitized every 30 minutes. Recommend implementing sanitizing/breakdown records for the deli slicer to verify proper sanitizing has been carried out.
-General food storage practices good at the time of inspection. Foods stored off the ground and protected from potential contamination.
-Self-service soup area had a sneeze guard.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-FOODSAFE Level 1 valid until May 03, 2024.
