Observation (CORRECTED DURING INSPECTION): Processed sliced cheese stored at 10-12C in new frozen containers.
Corrective Action(s): New policy is to use the frozen containers and store cheese at rush hours only (11-2pm, 7-9pm), rest of the time cheese is stored inside cooler. Recommend using timer to monitor this policy. Discard cheese over the 2 hour limit.

Observation: High temperature dishwasher measured at 70.3C on plate maximum. See code 308.
Corrective Action(s): Ensure to repair or replace dishwasher as per code 308. Practice proper warewashing on all dishware until health unit confirms dishwasher is ok to use.

402 - Employee does not wash hands properly or at adequate frequency [s. 21(3)]
Observation (CORRECTED DURING INSPECTION): Observed one staff dip glove-wearing hands into sanitizer between placing raw patties on the cook line. Observed another staff cracking raw egg, dipped hands in sanitzer and then continue to fry eggs.
Corrective Action(s): Directed both staffs to remove gloves, wash hands and wear a new pair of gloves. Concern with sanitizer in food. Please send me corporate plans regarding glove usage.

Observation: Few mice droppings noted around bait box in the dry storage area; mildew noted on the inside of ice machine. Some food fell under shelves of dry storage shelving units and under two compartment sinks in the back.
Corrective Action(s): Clean all noted areas.
