Dirty dishware shall be submerged in the washing sink directly so that they are not collected next to the clean drying rack.
Manager onsite has Foodsafe (National Food Safety Training, 2017) and will be sending staff to obtain Foodsafe Level 1.
Please forward the certificates when the course is passed and ensure that a Foodsafe or Foodsafe equivalent certified staff is scheduled to work each shift.
Prep cooler is being monitored daily for deviances.
Operating permit is found but out of date, permit collected onsite.
Please post the new permit when you receive it by mail.
