Observation (CORRECTED DURING INSPECTION): Observed a worker wipe her hands on her apron
Corrective Action(s): Apron's are for protection of underlying clothes only -you are re-contaminating hands by doing this. Clean hands at the various handwash sinks throughout the kitchen instead

-Goods stored in the walk-way of the Walk-in cooler -boxes and milk crates
Corrective Action(s): -Discard the cardboard -use a cleanable, non-absorbent floor liner for traction instead such as rubber mats
-Do not store goods in the walk-way of the Walk-in cooler unless it is on your carts for mobility and accessibility of other goods there

Daily temperature/concentration records maintained -good

NOTE: observed one ice cream scooper in a cup of hot water instead of the dipper well -operator indicates the scooper is changed every hour along with the water -OKAY -do not exceed 2 hours due to cream -ideally you should be using only the dipper well instead

Handwash sinks adequately stocked and clear for use
General sanitation good including hard-to-reach areas such as under the stoves
No signs of pests -Orkin Pest Control comes in monthly -last work report a few days ago indicates no pest activity
