All fridges are maintaining foods at 4 degrees Celsius or colder. All freezers are -18 degrees Celsius or colder. Liquid soap and paper towel at handsink. Soups, gravies and sauces in warmers are all 60 degrees Celsius or hotter. Premises well organized. Dishwasher final rinse reached 73 degrees Celsius at the plate surface. Temperature logs and dishwasher logs are being maintained. Ice baths being used for cooling soups.
