Observation (CORRECTED DURING INSPECTION): Internal temperature of pizzas in display warmer at 40 to 57 degrees C. High turnover led to pizzas being sold during inspection. Cook time within 2 hours.
Corrective Action(s): Display warmer temperature was increased. Please ensure that pizzas are held at 60 degrees C or more or that a time tracking system is in place (maximum 2 hours).

Corrective Action(s): Sanitzer prepared in labeled bucket at 100 ppm chlorine. Ensure that an approved food contact surface sanitizer is available at all times during operating hours. Store wiping cloths in sanitizer when not in use.

- Walk in cooler at 3 degrees C. Food is covered and stored off the ground.
- Prep cooler at 3 degrees C (below) and 4 degrees C (above)
- Glass beverage cooler at 7 degrees C. No potentially hazardous food storage.
- Thermometers available for cold holding units. Thermometers provided for hot holding unit at time of inspection.
- Hand washing station supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- Bleach water prepared at time of inspection at 100 ppm.
- Three sink plugs available for manual ware washing sinks.
- No evidence of pest activity noted.
