Observation (CORRECTED DURING INSPECTION): Sanitizer spray bottle had 0ppm chlorine measured. Operator had prepared 200ppm chlorine solution in the bottle at this time. All food prep surfaces to be sanitized using the solution at this time.
Corrective Action(s): Ensure to have the 200ppm chlorine solution available at all times.

Routine inspection conducted:

Facility opens after 3:00pm.

-Handwash stations adequately supplied with liquid soap, paper towels and hot/cold running water.
-Coolers operating below required temperature of 4'C; Freezer operating below required temperature of -18'C.
-High temperature dishwasher achieved 73.4'C at the plate level after final rinse.
-General food storage practice satisfactory.

NOTE: Equipment no longer in use - hot-holding unit, dough mixer at the back.

General sanitation of the facility satisfactory, except mentioned areas above.
