Observation: Two door Beverage Air prep cooler is not working properly. Food and air temperature is above 13 C.
Raw oysters on display at the bar area are not fully covered in ice.
Corrective Action(s): As previously mentioned to the restaurant manager, keep raw oysters fully covered with ice.
Keep all potentially hazardous foods at 4 C (40 F) or colder.
Discarded some food in 2 door prep cooler. Follow your written food safety plans and keep these plans on site.

Observation (CORRECTED DURING INSPECTION): The commercial dishwasher water temperature is only 44 C (111F). There is no hot water sanitizing rinse on this machine.
There is no chemical sanitizing rinse for the dishwasher (0 ppm chlorine).
Corrective Action(s): Always ensure that the dishwasher chemical sanitizing rinse is at 50 ppm chlorine or higher.
Corrected during inspection: the chemical sanitizing line was primed and now reaches 50 ppm chlorine.
Check daily using test strips to verify.
Clean and sanitize meat slicer and inside of ice machine.

Observation: Floor of walk in cooler is wet and is in poor condition and difficult to clean.
The floor in the hallway has shifted, has cracked tiles and is difficult to clean.
Corrective Action(s): Ensure that the floors in the kitchen hallway and walk-in cooler are in good condition and are easy to clean.

Observation: Dishwasher wash water is at 111 F and machine specifications are 120 F.
Two door prep cooler is not working properly.
Corrective Action(s): Ensure that the wash water for the dishwasher meets the machine's specifications.
Ensure that the 2 door prep cooler can keep food at 4 C or colder.

Discussed this report with owner during inspection with respect to dishwasher and prep cooler.
Note: the 3 door prep cooler is keeping food at the required temperature on the left hand side (near hand sink) but not on the right side. Ensure that staff only store lower risk foods on the right side and check this cooler twice daily. Keep accurate temperature records for all coolers.
