Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation: Drive-thru cooler was not at 4C but staff had transferred from from walk-in cooler to the dirve-thru cooler.
Correction: Ensure that the cooler has been pre-chilled prior to transferring foods.
Comments

Operator said drive through food items are in cooler from 10AM to 1PM.
Please ensure food items are changed at least 1x if cooler is not maintaining temperatures.
Operator said they do change this and refills are in new containers, they do not add old to new.
Try to turn on cooler earlier before putting in food but cooler not likely to reach 4C by 1PM, so please use time as a control, change product more frequently with less quantity per container.
Main line cooler is 6.9C internal temperature, 11C surface temperature for foods, operator put lid down during the inspection, using time as control as items are used in about 1hr.
Observed operator put down lids on main line cooler during the inspection, after making sandwiches, during non busy times, thank you.
Walk in cooler is below 4C.
