General comments:
- Hand washing stations are provided with hot/cold running water,liquid soap and paper towels.
- high-Temp. dishwasher registered at 72C on the dish surface.
- Food in all coolers are at or below 4C. Temperature monitoring log are kept and updated.
- Freezers are at or below -18C. Temp. Logs are kept updated.
- Sanitizer QUAT @200 ppm is available in buckets. Cloths are stored in the sanitizer solution.
- Hot holding unit is above 60C
- Internal temperature of food being cooked are monitored and records are kept on-site.
- No obvious sign of pest at this date. Pest management plan is in place. Reminder: Install the existing weather strip under the back door permanently so that reduces the chance of pest entering the premise.
- Drink dispensers are kept clean.
- General sanitation is good. Staff were reminded to clean under the equipment.
- Food stored above the floor on shelves.
- Operating permit is posted
