Observation (CORRECTED DURING INSPECTION): 1. Steam hot holding table for dim sum noted at 40 C - unit appears off or turned down
2. Hot hold display noted at 45 C
3. Pork and chicken steam buns stored in toaster oven - noted at room temp during inspection
Corrective Action(s): Ensure all hot held foods are held at or above 60 C.
1. Turn up steam table unit above 60 C
2. Turn up hot hold display unit above 60 C
3. Discard pork and chicken steam buns in toaster oven.

No monitoring of hot holding temperatures being done or recorded.
Do not turn hot holding units down or off when food is being hot held in unit.

402 - Employee does not wash hands properly or at adequate frequency [s. 21(3)]
Observation: All staff wear gloves, some wear 2 pairs at the same time.
Staff on cash changed top pair of gloves often.
2 male food handlers did not change gloves during inspection - tasks included food prep, cleaning, breaks, re-organizing kitchen.
1 food handler left the kitchen and entered the mall and returned shortly after and did not change his gloves or wash his hands.
Corrective Action(s): Ensure all staff wash hands regularly - a the start of the shift, before and after breaks and end of day at a minimum. Gloves do not replace proper hand washing and replacing gloves is not acceptable.
Gloves are single use disposable and must be discarded after each task.
Review proper hand washing and glove use with staff.

Corrective Action(s): Ensure all food is protected from contamination.
1. Once open, food within the can must be transferred into a food grade container and sealed.
2. Cover all food that is being stored
3. Do not double stack inserts - top insert food will not be kept under 4 C and the bottom of the top insert is dirty and is sitting on top of the food in the lower insert
