Observation (CORRECTED DURING INSPECTION): Deli hot holding unit is between 21 Celsius and 44 degrees Celsius.
Turned up during inspection.
Record log shows adequate temperatures however temperatures are being checked with an IR thermometer. These are not accurate. Of note - the thermometer in the upper case was accurate. Use similar thermometers in the lower case or another, more accurate method. Top case increased to 50 Celsius and top shelf of lower case to 58 Celsius. Monitor unit carefully; don't use bottom shelf until 60 degrees Celsius.

Observation (CORRECTED DURING INSPECTION): Sanitizer bucket had no detectable sanitizer (quats) at start of inspection. Changer for fresh sanitizer. 200 ppm quats.

Observation (CORRECTED DURING INSPECTION): 1) Deli handsink was partially blocked by a tray of chicken kabobs. Keep sink available at all times.
2) Hand sink faucet has a small leak - sprays water. Repair. 2 comp sink is stocked with soap and paper towel.

Comments

Dishwasher was very hot - 74.6 Celsius. Hand sinks were stocked. Fridges were < 4 Celsius. Well organized. No sign of pests.
