Observation: Tin foil container holding cooked shredded carrots and raisins stored on top of brown rice in rice cooker to stay warm. Noted 66 C.
Corrective Action(s): This is not the intended purpose or use of the rice cooker to hot hold other containers of food including rice. Ensure proper hot holding unit is available to hot hold foods intended to be hot held.

Observation: Clear liquid in 2 unlabelled spray bottles.
Corrective Action(s): Ensure all spray bottles / containers are labelled with contents to ensure they are being used for intended purpose. These bottles are holding only water according to the owner. Label "Water only" on containers.

Handsinks and washrooms supplied with hot & cold water, liquid soap and paper towel
50 ppm chlorine present in dishwasher rinse cycle to sanitize dishes
Bleach sanitizer solution (100 ppm chlorine) present in labelled spray bottle

Temperatures of coolers, freezers and hot holding were acceptable:
-prep cooler 4 C
-glass door cooler 2 C
-fridge/freezer 3 C/-11 C
-white upright freezer (fries) -1 C
-Back freezers -16 C and -17 C
-walk-in cooler 3 C
-hot holding was >60 C White rice 66 C, brown rice 67 C
Thermometers present in coolers and freezers to monitor temperatures.

Food in coolers was wrapped, covered to protect it from contamination. Raw meats were stored away from ready to eat items
No signs of pest activity noted at the time of the inspection. Pest control contract in place
Screen door in place at back entrance to kitchen.
