Observation (CORRECTED DURING INSPECTION): -Noted single used cups stored under sink
-Noted scoops stored in warm water beside coffee maker in front
-Noted wiping rags stored on counter or beside coffee machine
Corrective Action(s): -Do not any disposable utensils or any food related stuff store under sink
-Store scoops in ice water not just water
-Rinse wiping rags and store in a bucket of sanitizer at all time

Observation: -Noted some mold inside ice machine (over the plate not touching ice cubes)
-Noted block of cheese, cold cut were stored on edge of sink or inside sink during slicing
Corrective Action(s): -Clean and sanitize the ice machine-include this in sanitation plan
-Do not store foods in sink (or in edge of sink) use clean sanitized board

Observation: Noted something appears to be rodent dropping in cabinets ( in the corner beside self served coffee machine).
Corrective Action(s): Clean fully and put sticky traps for monitoring

Comments

Walk through inspection with prospect new owner:
-Temp of all coolers and freezers are satisfactory
-Two hand wash sink ( one beside self serve coffee machine and beside specialty coffee machine ), two comp sink beside slicer, two dishwashing sinks in the back
-No raw meat/chicken etc all foods are pre- cooked or processed from suppliers (except Bacon)

*Bleach solution in spary bottle too strong- dilute it to 100 ppm (mix 1 oz in 1 gallon of water)
* Ensure to have bleach solution at prep area and coffee machine area to store wiping rags
* Provide liquid soap and paper towel at hand washing sink beside coffee machine (speciality coffee)
* Either install splash guard both side of hand washing sink or do not store anything beside it ( risk of contamination due to splashing water during hand washing)
* Provide a up to date list of food suppliers
* Submit Food safety plan for available menu (refer to the package provided via email for information)
* Submit Sanitation plan ( refer to the package for more information )
* Clean the back area fullly
* Store all candies in bulk containers and hang tongs
* Switch to pre cooked bacon
* Wash lettuce and Spinach prior to food prep
* Ensure all foods are from approved suppliers ( sausage roll, sambosa, pizza pots ...) and have receipt on site.
* Label re-packaged foods (from bulk ) in cooler with date
* Provide thermometer for coolers


Submit a written response addressing all of the above via email to the are inspector fatemeh.emami@fraserhealth.ca prior to scheduling the inspection for change of ownership.
