- Salad bar coolers at or below 4'C
- Coolers along cooking line at or below 4'C
- Bar coolers at or below 4'C

- No hot-holding during inspection
- All food observed covered and stored at least 6 inches off the floor
- Chemicals are stored away from food
- General sanitation is good during inspection
- Hand washing stations and unobstructed and adequately supplied with hot and cold running water, liquid soap and paper towel
- DDBSA/lactic acid sanitizer at 272/700 ppm (in spray bottles or in buckets with wiping cloths)
- High-temperature dishwasher #1 measured at 74'C at plate surface (above minimum required final rinse temperature of 71'C)
- High-temperature dishwasher #2 measured at 73'C at plate surface (above minimum required final rinse temperature of 71'C)
- Glass washer measured at 12.5ppm iodine
- Ice machine and ventilation canopy observed in good sanitary condition
- No signs of pest activity during inspection
