Observation (CORRECTED DURING INSPECTION): Bleach sanitizer spray bottle was too strong - test strip bleached out.
Corrective Action(s): Ensure bleach is maintained at 100ppm to 200ppm to properly sanitize food contact surfaces. Concentrations in excess of 400ppm may be toxic. To prepare 100ppm to 200ppm bleach, add 1/2 teaspoon (2.5mL) bleach per litre of water. Bleach at 200ppm was prepared at the time of inspection.

Comments

-Follow-up inspection to May 12, 2022.
-Bar under counter cooler has been serviced and was at 4C. Compressor area has been cleaned. Accurate thermometer was present in cold holding unit. Continue to monitor the cooler unit and contact a service technician as needed.
-Kitchen upright cooler was reorganized and air flow is no longer obstructed - cooler unit was at 4C (top and bottom).
-Facility has cleaned and sanitized areas most affected by rodent droppings and sealed two potential entry points. Continue to monitor for pest activity and contact pest control services as needed. Addition of door sweep to back door may assist in preventing potential pest entry into the facility.
-Cleaning of under counter cooler has been carried out. Ensure staff maintain cooler in a clean and sanitary condition at all times. Door seal still needs to be replaced.
-Scoops were generally found to be stored in a clean and sanitary condition.
-Did not observe any foods stored in opened metal cans.
-Raw foods were stored below and separately from ready-to-eat foods at the time of inspection.
-Foods which were double stacked were found to have a physical barrier separating the foods.
-Did not observe any used single use containers stored with new containers at the time of inspection.
-Ensure staff continue to adhere to good hand hygiene practices to prevent potential cross contamination.
*Facility will be adding an additional upright cooler in the kitchen in the new couple weeks.
